how do i take tunes off and ipod touch?

just that i got one off ebay and the guy said he's left them on, so i was thinking if i like them may as well take them.

i couldnt even get the correct version of itunes, but it appears to be working all ok.

and other question, just about usage:

when ever on freinds ipod/itunes if its on shuffle and i select a track to play it never goes back to playing on shuffle.
also is it possible to line up a few songs and then for it to go back to shuffle?
