damn you ocuk for bringing on an irrational love of pancakes

I do pancakes quite regularly for brunch on Sat / Sun. Normally standard pancakes with lemon and sugar, but this morning we had savory ones. Turned out very nicely, so I'll share the recipe (makes 5 or 6 in a big pan) ...

Mix together 250g sifted flour and 3 large eggs in a mixing bowl. When none of the flour is visible as white powder, gradually add 500mls milk + 50mls water mix. Whisk it in and continue until it's all in the bowl - whisk until there are no lumps. Add 1 teaspoon of veg stock powder (I've got nice boullion stock as a powder), a few grinds of pepper and a shake of salt, a touch of paprika and either some finely chopped herbs (if you've got some fresh) or some dried mixed herbs. Melt ~50g of (real) butter in the frying pan and pour it into the mix. Whisk it thoroughly (and every time before you ladle out the next one). Wipe the excess butter out of the pan and add put the appropriate amount of mix to make your pancake. After the first side is done, flip and arrange down the center some ham (/cooked bacon) and some cream cheese. Cook until the second side is done, stick on a plate, add some shredded lettuce, roll and eat. I'd have taken some pictures to add to the thread, but I ate everything before I thought about it. Very tasty :)
