So, I'm hungry again and I thought it would be a good idea to have a thread where we can share quick recipes for snacking or a quick meal. I have pretty much never cooked and the other day I made an omelette and it came out perfectly (i know that isn't hard for most people but I consider it an achievement).

I will start with the omelette recipe because I did it this way and it tasted way nicer than the ones my mother used to make:


I did the first method. Also his way of cracking eggs worked well too. It was very light, as opposed to my previous experience of omelettes which have normally been quite rubbery...

I hope there isn't already a thread for this :-P

Depends what you class as quick but I made a nice soup yesterday that was so easy to make:

1x large butternut squash
1x large sweet potato
1x large onion
900ml veg stock (I used 3x veg stock cubes)
Knob of butter
Olive oil

- Heat butter in large pan (I found wider the better for soup)
- Add 1tbsp olive oil and then the onions. Cook until starting to go transparant
- Add chopped squash and sweet potato (about 2cm pieces)
- After 1 minute add stock
- Bring to boil, simmer for 45 minutes
- BLEND

Take about 10 minutes to prepare and another 5 minutes to blend but could easily be done in slow cooker.


Another one I quite like is using my George Forman grill, 1x chicken breast per person, cut in half and stuff with cottage cheese (1/3 cup should be enough) and then add either some fresh/dried chives or 1/2 tbsp sundried tomatoes and mix with cottage cheese. Cook and eat with pasta or whatever you like.

Agreed, soups are very quick and easy to make.

Butternut Squash soup is lovely but i can never be bothered "peeling" them

Then slice them in half, deseed and roast to 30-40 minutes with a little olive oil. All you need to do is scoop out flesh then.

A great versatile meal is the stir fry. If you are lazy then you can buy precut veg, and a sauce but the fresher the ingredients the better. You can play around with your favourite ingredients .

2tbsp groundnut oil
4 skinless, boneless chicken breasts, cubed
75g (3oz) cashew nuts
2tsp chopped fresh ginger
500g (1lb 2oz) packet stir-fry vegetables
7tbsp black bean sauce
5tbsp torn fresh coriander
.Method
1.Heat a wok, add half the oil and swirl in the pan - it should be smoking hot.
2.Add the chicken and stir-fry for 5 mins. Add the cashews and ginger, and stir-fry for a further 2-3 mins until cooked, adding a little water if needed.
3.Remove the chicken mixture from the wok and set aside. Give the wok a quick wipe and reheat. Add the remainder of the oil. Once smoking hot, add the vegetables and stir-fry for 3 mins.
4.Add the black bean sauce with a little water to make it thinner, then the chicken. Heat through for 1-2 mins.
5.Scatter coriander over the top and serve with steamed rice
