The **reasonably healthy every day eating** thread

Just an idea for those of us who look in the fridge and store cupboard and then go out and get a take away because we are out of ideas for a weekday meal, of course "healthy" is very subjective but hey its all a step in the right direction and this thread will hopefully build into a more healthy and tastier option than a take away ;)

Basic rules

  • Has to be tasty but not going to kill you too soon
    Pretty basic stuff that does not cost a fortune
    Give a list of ingredients and options if healthier
    Fairly quick and easy to cook and prepare
    A picture is always good to entice us all in but not a deal breaker
    Enjoy

I'll start with a dish I blatently stole off of the sweary blokes channel four programme

Put on to boil a handful of linguine or what ever pasta you have in the cupboard (not to much!)
Sweat off some mushrooms, leaks and a garlic in a pan
after 5 mins add enough chicken of veg stock to half cover the ingredients and reduce by 50% (if using a stock cube you only need an 1/8 per person)
little bit of salt & pepper
add half a teaspoon of dried tarragon per person
When the pasta is cooked to have just a little bite add it to the veg along with just a tiny bit of cream ( you really dont need much and can substitute it for low fat cream fresh but it might split but will not spoil the taste)
cook for a futher 2 mins and the bob is your uncle
If you have it sprinkle just a touch of grated parmisan over the finished dish
nom!
if you have a bit of left over chicken you can ad that at the veg stage but its really not nessasary as it quite a satisfying meal

If this thread has been done before feel free to ignor/delete but I have been popping in here every now and then and not seen anything specific to trying to be a bit more healthy
 
Trust me its healthy compared to my normal diet :eek: and i did add the "reasonabaly" bit

Just seemed a few on here were like me trying to change there normal pretty unhealthy diet by taking the time to cook rather than get takeaways all the time and it might be good to share a few easy recipies to get into that mind set

but hey if its a non starter (forgive the pun) thats fine with me

Salmon wrapped in Prociutto with new potatos and green beans

Really easy in just 20 mins
Heat oven to 190
Season the salmon with black pepper and wrap in the ham
Par boil the potatos for 5-6 mins, drain toss in a tiny bit of olive oil and add some chopped chives, salt and pepper
Scatter the potatos on a baking tray and place the salmon on top, cook for 15-18 mins
Steam the beans for 6 mins
Serve the dish with a bit more black pepper and lemon juice on the fish

Okay the prociutto is not very healthy but theres only one slice per portion and it gives the fish a lovely crunch :D
