Anything I should know before buying?

As money doesn't seem to be an issue and you want tri-fire then the above spec will be a mighty build.

If it's just for gaming and general apps use then the 2500K would be suffice but TBH with the rest of your spec a 2500k would look out of place ;)

Well if you are just gaming then you could save your self some money and get the i5 2500k, unless your work would take advantage of the hyperthreading the i7 offers. I would change the ram, you will not very little difference for the money you spend-

But I want the best system I can get :D

As for the cooler, I was just going stock. I think the sheer number of fans I'm getting should be enough, right?

If you are spending that much on the rest you may as well go for a aftermarket cooler, the stock cooler is not so good for overclocking if thats what you have in mind?

What cooler will you be sticking on it or is it going under water (true water)?

I'm not really sure how to fit aftermarket coolers so I'm a little bit scared of them.. I've fit water-cooling systems but I don't want the high maintenance of it.

I could always google it, the hyper 212 looks good.

You can't have the above spec and not fit a quality third party cooler - that would be the equivalent of buying a mansion and getting argos to furnish it. Plus, it's a must to clock the 2600k - it's mandatory when you purchase the K series ;) (especially with that spec)

After market coolers are 'usually' easier to fit than the awfully designed push pin stock coolers. I and other will happily talk you through the process if you're concerened - i recommend the SIlver Arrow - when in stock.

2600K don't actually offer better performance for gaming comparing to 2500K when both are on the same clock. You will have a better system dropping from the 2600K down to 2500K, and put the money saved toward a 60/64GB SSD :p

And you definitely want a decent aftermarket CPU cooler, as if you want the most out of your Tri-fire 6950, you would need to clock the CPU to as high as possible (within reasonable voltage).

I'm already getting a SSD, should have put that in specs (Adding now), I also use a lot of apps that can make use of the threads.

Which is the best after-market cooler for the 2600k regardless of price?

I would use quality air - either the Silver Arrow (when in stock) or the Noctua. The Silver Arrow is the better bang for buck - performance wise they're both on a par.

I'm going with the Noctua as it was cheaper where I'm getting it from, and it looks pretty beast.

Know of any 6950 with dual fans that has space for two crossfire bridges? I need one to connect the two frozrs

Not my forte i'm afraid - but if you don't get an answer here try a dedicated post in the 'Graphics Card Forum' as you will probably get a fairly rapid response.
