What is the name given to the thick and syrupy kind of balsamic vinegar? I'm not talking about a balsamic reduction.
Oh - ok. Yes, I have been buying supermarket stuff. So I guess the stuff from (say) a Carluccio's will do?Good, proper balsamic vinegar should be pretty thick. The stuff you generally get in supermarkets doesn't come close to this due to price. It's expensive stuff.
That being said, you do get Balsamic Syrup which is thicker.
You're kidding me? I just bought some of the Modena from Carluccio's for £20 - it was heavily matured and thick (corked, wax seal).Thick balsamic is called Traditional Balsamic of Reggio Emilia or Modena (not to be confused with the cheap 'balsamic vinegar of Modena')
