is my ernemax 375w psu good enough?

Sure it depends on what other things you will be running off the PSU, number of HDD, GFX card. Could probably get a higher wattage enermax to give you a bit more headroom for OC'ing.

Depends on gfx card mainly, if you have a nvidia 7xxx series or 6xxx or a lower end ati (non 18xx 19xx series) , your psu is more than good enough...

off the psu i will be running 1 sata hd, 2 ide cdrs, mabye a 6700gt gfx card. ive seen a sparkle psu 600w would this do the job?

6700 is an overclocked 6600gt if i renember correctly, 6600gt needs no more as 350 watts , so you're good, core 2 duo's are very energy-efficient...
