I'd like, if I can, to draw upon your expertise again! Should the build below work without much issue?

CPU:
Intel Ivy Bridge i5-3570K

Motherboard:
ASRock Z77 Extreme6

RAM:
Corsair Vengeance 8GB (2x4gb) [CMZ8GX3M2A1600C9]

HDD:
Western Digital 1TB Caviar Black [WD1002FAEX]

GPU:
Sapphire Radeon HD 7850 2GB [11200-00-20G]

Case:
SilverStone Precision Series [PS06B-W]

DVD-RW:
ASUS 24x SATA DVD+-RW [DRW-24B1ST]

Monitor:
ASUS 23" LCD 1080p HD [VH232H]

What would the benefit be of lower profile RAM? I thought the heatsinks on them were beneficial, rather than a detractor?

As for the CPU cooler, I can upgrade later I think - the i5 comes with a stock one, I thought. I will double check that one, though.

It comes with a stock cooler however you will not want to overclock with it.

The tall ram heatsinks don't really make any diffrence, but can interfear with quite a lot of CPU heatsinks.
