Prepare to be massively underwhelmed then hopefully you wont be that dissapointed.

Because they are genreally rubbish.

I just went (a few weeks ago) and drove a 360 at prestwold hall.

Never been so disapointed in my life. Also a 360 is a poor car and the F1 box is terrible! But that's a different thread.

I would like a go in the race cars but i am fearful that they are restircted majorly.

I find it amazing that people think anything around 100 quid is going to be anything other than utter bobbins in most cases. Really, what do you expect. YOU GET WHAT YOU PAY FOR in most things in life and £75-£100 is going to get you very little. Budget £500, get a track day booked and get a race car booked for the day, can be an MX-5, Caterham, Clio it doesn't matter. You will have MUCH MORE FUN in such circumstances and will also improve as a driver. On an open pitlane event you can have 6 hours of track time, yes, 6 hours!!! MOST track events you see advertised are crap. They are a taster, a sample, but don't expect to get anything more than a couple of very short laps and often at very slow speeds...relatively.
