Time for an upgrade

I currently have a shuttle so will be need a case and some power to go with this. I have storage space but looking to get a new 1TB drive for the operating system, I wondered about SSD but my PC is on 24/7 and not sure how that affects life span etc (need about 4-500GB if anyone suggests one). PC not really used for games and I have a graphics card I can still use. I do a fair amount of encoding etc so need the CPU power.

So far I have come up with:

Intel Core i7-6700K 4.0GHz (Skylake) Socket LGA1151

Corsair Vengeance LPX 16GB (2x8GB) DDR4 PC4-24000C15 3000MHz Dual Channel Kit

Super Flower Golden Green HX 550W "80 Plus Gold" Power Supply

WD Black 1TB 7200rpm SATA 6Gb/s 64MB

Lian-Li PC-9FB Aluminium Midi Tower Case - Black

Sapphire Vapour-X w/ Dual Fan 120mm CPU Cooler

Case isn't really a must, just something I have in the basket at the moment. There's so many choices and if someone can suggest a cheaper MIDI tower then I will consider it.

Haven't added a motherboard as I'm a bit out of touch at the moment. What's the difference between the 3 1151 chipsets on the boards? I'm not going to be overclocking to the limits, might have a small5-10% tweak but any old board can usual handle that.

Budget is about £800, would like to keep below that but if there is massive gains to be made by going a smidge over then I will consider that too.

I've stuck a Gigabyte Z170-Gaming K3 Intel Z170 (Socket 1151) DDR4 board in my basket as from what I can tell it suits my needs and fits my parts/case.

Can someone take a look over all these and make sure I haven't made any errors (such as not enough power, cpu, mem and board all work together etc)? Is there any swaps I should be making such as spending less here to make more available there?

Shuttle was due to space problems. It's no longer an issue and want a normal case & power supply.

What's the advantages of an X99 for encoding? Haven't build a machine for years so I'm very out of the loop.

*Edit, having looked at the price, X99 seems out of budget really

If it's on 24/7 and I use a normal drive for my downloads/encoding will an SSD be ok? I don't need the storage space so can do away with the Toshiba.
