Been thinking about this for the last few months. I mainly like to game, 1080P, do the odd bit of video editing too here and there.

My current system is:

Mainboard : Gigabyte Z68AP-D3
Processor : Intel Core i5 2500K
Physical Memory : Corsair XMS3 1600 8192 MB (2 x 4096 DDR3-SDRAM )
GPU : Gigabyte R9-280X (Rev 2.0)
Hard Disk : M4-CT128M4SSD2 (128GB)
Hard Disk : SAMSUNG HD250HJ (250GB)
Hard Disk : SAMSUNG HD753LJ (750GB)
Case: Fractal R4
PSU:600W Coolermaster

Any advice would be good :)

Is your CPU overclocked? If not, do you have a CPU heatsink?

I think your CPU and board are fine - you could either chuck another 2x4GB kit in there or sell your current RAM and get a fresh 16GB kit which is useful for video and photo editing

Overclock the CPU and add an SSD (or two, one for a scratch disk maybe?) and you should be set

If after this you think it's still a bit too slow for the rendering and editing, chuck a used 2600k or 2700k or even 3770k in there and see how you get on. How does that sound?

Had a tidy up in my case, tried to hide all wires the best I could round the other side.

I've got the Arctic freezer 13 sat on my CPU, so I've decided to overclock to 4.0Ghz. I've read everything should be fine using stock voltage etc at this speed.

Will see how things go.
