1 Carrot fairly large
1 Onion fairly large
2 Celery sticks
4 Garlic cloves
Olive oil

Blend to a mush.....add just enough water to prevent burning, cook 45-60 mins.....keep adding water if needed

Add 1 tin chopped tomatoes or use fresh.......cook for a further 45 mins, add water if needed.

Salt...pepper...basil...done

Enough for 300-350g of dried pasta.....M&S Fiorelli is excellent dried pasta.

I also add about 60-70g of Parmigiano-Reggiano.

The best rich / thick tom sauce I have ever made:

Half your toms, bung em in a baking tray so they are well packed. Bash a few cloves of garlic (no need to peel), number depends on how many tome you have and how garlicy you like it :D

Sprinkle loads of sea salt, and lashings and lashing of decent olive oil. Mix well.

Bake at a low temp (~160) for over an hour, until they are well roasted and wilted.

Scoop out and bung in a sieve. Use the back of a metal spoon to force through sieve, make sure you get it all. Should be pretty much ready to go as is, but feel free to put it on the hob to thicken more, or add freshly chopped herbs (oregano for pizza!) and black pepper.

A couple of cloves of garlic-crushed.
A can of tomatoes.
A couple of sprigs of Rosemary.
Couple of tablespoons of olive oil.
Salt to taste.

Heat the oil and add the garlic - you ate not frying the garlic, just let the garlic flavours infuse the oil under a gentle flame.
Add the rest of the ingredients, and simmer under a low heat for at least 30min.

I will sometimes add 1*dried red chilli -this should be added to the oil with the garlic before the other ingredients.
