Hmm tough one, in no particular order.

Crysis, Fear and probably Far Cry. Painkiller looked pretty darn detailed as I recall too, Arghh! There's to many to choose from

HL2 is the best FPS ever made. The best Graphics and the best single player game .

Crysis, shocking game.. but when the Radeon HD 7970 is released, we might be able to play it without motion sickness from flipping rubbish framerates!! it will look great too!!

Company of heroes is superb and nice graphics
GRID graphics are also very impressive
Quake 4 is fun to play and has great graphics
BioShock is nice too!!
