Torn between two 570 cards - which would you get?

fair enough...I didn't run any AA when running BF3 on my 5850 so don't know what impact it has on fps; didn't feel the need as it looked great without.
 
That all said depends how soon you want a new gfx card. ATI's 7000 series might not be that far away. Could be worth waiting a couple of months to see what they bring to the table
 
If you go for 580 now you can always get another down the line too! I go for the single card option every time, less heat, less power requirement, less hassle, same expense usually!
