Transfering music to ipod keeping pc structure

You need to update the ID3 metadata within your files, as iTunes and iPods use this, rather than file name and folder structure, to index your music.
Select a file in iTunes, goto File --> Get Info and click on the 'Info' tab.
You can edit multiple files at the same time for common attributes such as Album and Artist name. This is done by selecting multiple files before selecting Get Info and editing as above.
Edit - on Mac OS, there are a number of handy applescripts that can do things such as renaming track names using the actual file's filename. Not sure of anything similar for Windows, but you should be able to find a better utility to update your ID3 tags more easily than it can be done in iTunes

Right Click > Get Info on all the tracks in a particular album.
Then, simply drag a picture from an internet browser or from a file on your PC to the blank space alloted to the cover art.
