I have a 4870 X2 with 2GB of memory, (1GB per GPU).

I am thinking of trifiring, with a single 4870 GPU card.

Single 4870 GPUs come in 2 versions; 1GB or 2GB.

Would trifiring with the 2GB version be possible?

Would there be any gain over the 1GB version?

4870 X2 2GB is essentially 1GB vram per GPU if I'm correct. In such case, adding in another 4870 1GB would be sufficient, because even if you add in another 4870 2GB it would still work as 1GB.
 
From what I understand (I could be wrong,) since your other two cards are 1GB cards, if you were to install a third card that is 2GB, only 1GB of it will be used.

The 4870 X2 I have already is a single card, with 2 GPUs on it.

But either way, from what I understand from the replies above ordering another card (a single GPU 4870) with 2GB would work with the 4870 X2, but would work no better with the 4870 X2 than another single GPU 4870 with 1 GB.

It would work as 3x 4870's with 1GB each.
