Trout

Rosemarry goes well. Apple slices inside your tin foil parcel with cider in the baking tray. Don't forget t kiss it before putting in oven ;)
 
Chilli, ginger and lime is my personal favourite. I've been fly fishing for years and can't stand trout without some sort of acidity to cut through the earthy flavour.

I usually just give the bloody things away, fresh trout has become a currency with my friends. "Help me with my decking, here's a trout!"
 
Fried in a little butter with black pepper, mainly for river caught brown trout. Im not that keen on reservoir caught rainbow trout as they stink of fish meal. Sea trout, if you can get them, theyre on another level taste wise. Incredibly hard to catch though.
 
Where's it from? lake stocked trout especially if the water is muddy is terrible unless you cover it in spices which defeats the object. Fresh water trout much nicer but it won't be rainbow I'd assume brown.
 
I'm not a massive fan of Trout (all though I love Salmon to bits), but when I have it it's usually baked in foil/paper with chilli, lime and lemon grass

Season it with a little salt and pepper then pan fry it with some Thyme for a nice crispy skin, server it with some watercress, beetroot and a sauce made of two tablespoons of yoghurt, a teaspoon of horseradish, juice of half a lemon and a pinch of salt. Add some home made wedges or a jacket potato and your done.
