Trying to make Ketogenic Friendly Sausages

Hi, I don't know if this is the best place to ask, but I've been doing a ketogenic diet for a while and one food I really miss are Sausages. I have worked as a butcher for a while before and I have the equipment and knowledge to make them except for one thing and googling hasn't really helped. Sausages usually (in England at least) have breadcrumbs in. It helps to make the sausage soft and it absorbs some of the moisture. I can't be using bread if I want to make ketogenic friendly sausages, and I don't really want to cheat for them. Does anyone know if there's anything I could use instead (that's low carb) or if it will be fine to just leave it out. If no-one knows I'll just have to try leaving it out and I'll share my findings with you
 
A quick google suggests that Keto is only low carb, not zero carb... and there would appear to be plenty of sausages with less than 1g net carbs per serving, gluten free and even low sodium nitrate.
What about making a crumb from Genius bread?

You'd be correct that it is low carb, not no carb. I hadn't considered using a Low-Carb bread. What are the low carb sausages you've found? Your googling must be better than mine because I couldn't find any
 
Id just make them 100% meat. I don't think I've seen recipes that have anything but meat and herbs/spices in. No breadcrumbs.

You could use vital wheat gluten, apparently. That's meant to be mostly protein and very low carb.
 
I've been doing keto for 18 months now and as a South African, sausage (wors) is a must! I use 100% pork shoulder and spices. I normally make batches of 6kg of which 50% is coarse ground and 50% is fine ground. Make sure the meat is almost freezing and just mix it all together for a good 5 minutes to bond the meat and it becomes really sticky without needing any binder.

If needs must and you really need sausages then Lidl does a gluten free sausage which is 1g of carbs per 100g.
