TS & Office 2010

Trying to get my head around Office 2010 Licensing And a TS box.

I wish to have an SBS 2008 Server and a 2008 Standard Server running as a TS. I want to install Office 2010 on the TS, to which I seem to have to buy either Office 2010 Standard or Professional Plus through Volume License.

Correct.

Office 2010 on TS / RDS needs to use a Volume License Key (VLK) - Microsoft

To function correctly, remote Desktop Services must be deployed with Microsoft Office a volume license key.

Standard and Pro Plus are the only versions of Office available via Volume Licensing.
 
Ok

In theory if only one of my remote users is going to use Office 2010 would one license be enough? Or do you have to buy in 5's?

I would also need Outlook on the TS which the Pro Plus doesn't seem to come with, how would I give the users on the TS box Exchange access?

2010 Pro Plus does include Outlook, so nothing to worry about there.

The minimum order for a volume license is 5 units. Office is 1 unit, so to the trick we use to pad out the order is to order a random cheap product. The most recent one we've used is SKU 66J-05385 : Windows Vista Business DVD Playback Pack. No idea what the license is for but it fills up the order nicely :D

Outlook is licensed, so don't forgot to work out how to cover the use of that if more than the single Office (ie Word / Excel) user is going to use it. You can buy Outlook licenses on their own, so that might be another way to reach the minimum order size.
