Two very quick questions

I just built a new rig, i5 760 running at 4.0 ghz on air.

My cpu temps at full load (prime95) are stable at around 60c, is that too hot?

second question is a massive noob question. My mobo has three sys fan headers but I am unsure on how I utilise them, is there a certain type of fan I need? if so could you recommend a 120mm and 140mm fan?

that temp seems fine to me, althought ive not had any experience with the newer cpu's. as foor the fans you just need a fan with a 3 pin plug instead of a molex

That's very good temps, and won't shorten the life of your cpu.
