Ubuntu Bootable USB Flash Disk

Hi, I've created a bootable Ubuntu USB flash disk. Is there any way to retain any installed software on the boot disk so that next time I boot from it, it is already there ?

For example it doesn't come with Wine installed, I can install Wine once booted, but if I reboot it has gone. I'd like this to be available next time I boot.

I've got Ubuntu installed on my drive. I'm just interested in whether or not what I'm thinking of is possible, as it would create quite a handy little portable OS. You could boot into it from any machine and have exactly what you want at your fingertips.
