It's very annoy when watching movies as it keeps going to hibernate every few minutes. How do I alter how often Ubuntu does that?

I use smplayer and it disables power saving while playing content. If all else fails you can right click the top panel and add the "Inhibit Applet" which can be clicked to inhibit power saving and then clicked again after youre done to turn it back on.
Check your power saving settings in System->Preferences->Power Management
You can alter the settings here. I think you need to adjust the 'Put computer to sleep when inactive for' setting. Do it under both the battery and mains power tab.
