I still enjoy the first game, you've got to be able to get over the graphics though, wish they'd do a remake - everything the same but prettier.
This. Problem is everyone who tries to do remake seems to want to try to 'improve' the game at the same time, I'd love to see a remake 100% faithful to the original but with updated graphics and a mod system so if you wanted you could then alter it from the original.

Its a classic game and still enjoyable despite the graphics. Also I imagine a most realistic simulation of alien invasion:). I think the average life expectacy of an earth soldier would be very much like that of a red shirt in star trek (not long)

There's already been an "unofficial" remake called "UFO: Extraterrestrials", but it just lacks that "magic" that the original still has.

I think both the original, "Enemy Unknown", and "Terror from the Deep" both still hold up well due to the core gameplay -- but MAN the difficulty is BRUTAL!
 
The original still holds up incredibly well. Just don't try to go fullscreen on a 1680 x 1050 monitor :)

It's the tactical options you get in the missions that keep it interesting, and the sheer scale of devastation you can inflict never gets old. Twenty years later I've yet to see another game that lets you completely destroy a level.
