Unlocked network phone - where do updates now come from?

My Google-fu is failing me. My brain can see many possible answers to this.

You have a mobile that was purchased from EE and is locked to their network.
12 months into the contract you decide to unlock the phone as you're handing it to someone else who wants to use it on Vodafone. You decide the £8 fee at EE is probably the easiest way to do this.
It all happens instantly, you get your unlock code and now the phone is recognising Vodafone SIM.

Where do updates for this phone now come from?
The phone in question is a Galaxy S10e - so are security updates now coming directly from Samsung as they would for any "SIM-Free" phone you would purchase?

If you don't mind a little geekery then you can use Odin to flash a stock Samsung ROM to the phone which will then remove the need to wait for EE to release updates.
I took a look at the Odin website last night - the process seems quite straight forward to flash a Samsung ROM on to the phone - although despite spending 15 minutes clicking on various links on the site, I couldn't actually find any way to actually download the ROM.
Every download link took me to a download for the application itself - every document tells you to "make sure you download the correct ROM for your device" but doesn't actually seem to tell you where you can get that from.
