Upgrade from a Samsung S10e

So my contract is coming to an end this month and was wondering what people would recommend in replacing an S10e?

I currently pay £32 a month with EE so don't mind paying around the same with maybe a small up front payment for a new handset.

I did consider the iPhone 12 which can be had for £32 a month and £249 up front but that that up front cost is a bit much and also not sure if I want to move to Apple.

I've also considered going Sim only for a while and then getting the Pixel 6 when that comes out.

What would be a worthwhile upgrade?

As a previous S10e owner honestly FWIW the only phone I would wholly recommend right now is the iPhone 12, possibly the best phone I've ever had and it's been all Android up to this point.
Depending on what network/tariff you want there are some good deals over on Uswitch - around £20pm and £99 up front give or take.

I may be back here in a month or so anyway as the Mrs' S10e contract is up at the start of June and I don't think she'll move to Apple. So if I was picking a phone for her right now I'd probably go Pixel 5.
She's only ever used Samsung Phones with the exception of when I got her to at least open her mind a bit and got the Pixel 2 which she did like. When her contract was up with that we were between Pixel 3 and 4 - neither of which I was particularly keen to recommend, hence the S10e.
