Upgrade - Long overdue... Advice Please

I have some funds coming available later this month and need some help to decide how to upgrade or to do a full new build

My current system consists of:

Cooler Master RC-1000 Cosmos - only issue is poor cable management, I might not see it but I like it neat.

Abit IP35 (Intel P35+ICH9/R)

Intel(R) Core(TM)2 Duo CPU E6850 @ 3.00GHz - stock cooler

4x 1024mb Corsair DDR2 400mhz

NVIDIA GeForce GTX 460 768MB - recent replacement for dead GTS 8800

Corsair TX 750W ATX SLI Compliant Power Supply (CMPSU-750TXUK)

Monitor - Formac TFT2010 - happy with this running at native 1600x1200

As you can see the system is old, I am now running a single Samsung 160gb drive for the OS as the matching drive that was in raid0 died, and now the whole system feels slow and unresponsive, it takes ages just to open one of the other 500gb drives I have.

I only game, a little, at COD Waw and Cod 4, most of the useage is for Photoshop, Dreamweaver and Video via Pinnacle or Premier

I just now feel the need for a bit more speed as well as a bit of silence!

I have been doing lots or reading in this place and have tried to come up with a list...

To what degree are you video/photo editing if its nothing serious you wont reallly need the i7, save some money and get the i5.

Im not sure about this but i thought the z68 boards were better for video editing and things because the have the lucidlogix virtu thing. ( get someone else to clarify this bit :p )

It's not a massive amount, mainly videos of horses for advertising on the web and show presentations.
 
After rethink, hopefully now a bit more sensible and will still be a massive upgrade.

Thanks for the help and advice given, I have yet to sort the cable management properly but crikey it's fast, this system has now become a joy to use.
 
Yep, no sata leads either... had to rush on to get it sorted... will post a pic when all completed.
Just having a go at overclocks... it seems not too difficult with this new style bios.
