Upgrade of an old rig.

Hello, to all of you.
I'm looking for advice about an upgrade of my old gaming rig.
Budget around £500-£800, could push up to £1000, but pref not to.
Current rig:
CPU - i5 6600K LGA1151
CPU cooler - NZXT kraken X61
MB - asus maximus gene VIII z170
GPU - MSI Suprime RTX 3070 (recent purchase)
SDD - WD black SN850 1TB M.2 NVMe
+ some old 2x HDDs for storage.
RAM - C. Dominator 2x8GB 2666MHz
case - BitFenix AEGIS
PSU - EVGA ATX gold 750W
WI-FI adapter: Atheros AR9287
monitors multiple:
Main: Samsung LU28R55 4K 3840 x 2160 native
2 side ones in vertical portrait orientation
Dell P2210 Res. 1050 x 1680 native
samsung S24D590 Res. 1920 x 1080 native.

Depends how much you want to spend, but on the lower-end of the budget, then once they're out, maybe an i5-13400 or 7600 non-X. At the upper end, i5-13600K or 7700 non-X.
 
You have some very good components mixed in with older cpu/mobo platform.

R5 7600x + 32 gb DDR5 + B650 mobo will set you back £650 or so and you can then reuse your other parts such as the NVME SSD + GPU + PSU. If you contact NZXT you may be able to get a new mounting kit for AM5 or if it already had the AM4 mounting kit then use that.
