Would the m.2 nvme be faster at loading windows and shutting down, and for browsing internet with google chrome and firefox?
yes but no
if your current drive is not 100% full then upgrading to a nvme ssd will not noticeably impact performance

Its read and write speeds are
- Read speed: 560 MB/s
- Write speed: 530 MB/s

My main reason for moving to an NVME drive when I needed a new drive was purely to get rid of the extra cables.
