Going to a 680 or 7970 is not a good £ per performance upgrade. I say this having bought a 680 but that wasn't a consideration for me.
Are your crossfire 5870's struggling? Would have thought they were fine still.
What is the rest of your machine like? It's likely you'd see an increase in performance (while losing any crossfire issues as well) but we aren't talking huge amounts here.
The 680 for reference - in my machine - puts out about 60-150FPS in BF3 with everything maxed out at 1920*1080.
