Upgrading + dual monitors (advice needed)

Current setup:
OcUK Value IP35-S Intel P35 (Socket 775) PCI-Express DDR2 Motherboard
2GB RAM
Intel(R) Core(TM)2 Duo CPU E8400 @ 3.00GHz
GeForce 8800 GT
Samsung 22" LCD
32" LCD TV

Now I'm wanting to upgrade my computer mainly for video & graphic editing combined with dual monitors.
Currently both my vga (tv) & dvi (monitor) are being used so I obviously need a new graphics card. Will buying something better than the 8800gt bottleneck the pc? And will the second card handle another two displays? So I'm running all four?

Setup I want to achieve...
4 monitors running horizontally two of which will have different resolutions.

Since it's not for gaming your 8800GT is more than enough, and it's CUDA support should also be helping with the video and graphics work. Ideally though, you need a better CPU and more RAM for this sort of work. If you grab a Sandy/IvyBridge CPU and also use it's dual/triple monitor-support IGP, combined with the 8800GT this will effectively give you the four monitor support. How much are you willing to spend?

Any size preference on the monitors? Do you mind upgrading the CPU/RAM/Motherboard instead of the GPU? It will benefit the video and graphics work a lot more, and as stated before, you can also use the integrated graphics with the 8800GT to give you the extra display outputs.
 
The 8 threads on the 3770K will help with the encoding and rendering a lot. The 8gb RAM will also give the software a lot of space to play around with, so less pagefiling should happen and in turn, should speed things when editing. From your current CPU and RAM it will give a lot of improvement.

The motherboard also has three display outputs, DVI, VGA and HDMI, so it can support up to three monitors thanks to the HD 4000 on the 3770K. You can also add your 8800GT for even more monitor outputs.

I've only included one monitor in for now, best way is to let you play with it and see if the 24" and 22" is enough for your work. Can always buy another one later on if needed.

And the CPU cooler? Well, let's just say the stock Intel is loud :p.
