Upgrading early next year , will I be able to stay with XP pro?

There is no reason not to go with Vista in my opinion.

I'm not familiar with the i7 chip range, but I would hazzard a guess that you will need a 64-bit OS. (If you're going with >= 4GB RAM, then you will need 64-Bit anyway).

Vista Home Premium is the version to buy. Seeing as you're going with an i7, you won't be upgrading your motherboard any time soon, so you could go with OEM, however, I would still go with Retail.

Also, if you wanted to stay with XP Pro, it depends if your licence is OEM or Retail - if it's OEM, then you will need to buy a new OS, in which case, get Vista.

It will work OK on XP, but Vista contains optimisations which will make the most out of the 8 cores you'll have available.

There's really no reason not to go to Vista. XP is getting dated now, and if you're going for 6GB of RAM (which you should be if you're going i7) then Vista x64 is the best OS to make use of that RAM.
 
Once you try vista64 you wont go back. I was an Xp fan until I pulled my finger out and upgraded my cpu. Fromxp to vista. Wow just wow - world of difference. Much cosmetic but also much more intuitive. Still, we'll all be upgrading again to 7 next year or next :X
