I have a i7 920 @ 4ghz, 6gb ram, a 5870 and an ssd.

The BF3 beta did not run that well at 1080p when maxed out...I am assuming the i7 wont make much difference but would going from a 5870 to a 580 for example make much difference? Not sure about crossfiring with another 5870 as there still seem to be problems with drivers, microstutter, etc...

It ran fine for me with practically the same setup - something else is your problem.

I played 1920x1200 on High with AA (default settings) and it looked pimp and ran smooth as.

Crossfire it. I was running my ref 5850's 1000mhz/4000mhz clocks in crossfire on bf3 with really good fps on high/uiltra settings resolution 2560x1600.

I'm in similar position, it ran amazing for me in High gfx but if I want Ultra I think it will struggle (I never use AA), also just got a new samsung 27" 120hz monitor and would like a stable 120fps lol but don't know if should crossfire my 5870 or just wait an get the 7xxx series card(s) possibly crossfire those but I am concerned about micro-stuttering if I crossfire

I'm going to wait until the game comes out and decide from there I think.

Game ran fine for me on high/default settings and looked fine 1080p, fraps on metro about 50-55 fps and caspian 45-50 fps. I would personally wait for the next gen cards as they are supposed to be a big leap forward in performance. That is what i am doing bf3 will be more taxing than most other titles. Besides if you xfire you still only have 1 gig cards. Newer cards will most probably be 2gig + video memory.

AFAIK the graphic settings on alpha and beta had no effect regardless of what you set them too
but i hope 5870 is ok , i really dont want to buy a new water block
