Upgrading from i5 2500k

Hello, I was hoping to get some upgrade advice. I have had an i5 2500k system since 2011 and there are some games coming up like the Resident Evil 2 remake which I doubt my system can handle, as playing Rise of the Tomb Raider did not go well. I also use my PC for encoding audio, editing audio files and Photoshop. Here is my current system and the proposed new one:

Current PC:
i5 2500k @ 4.40GHz
Asus P8P67 PRO
Corsair A50 CPU Cooler
G.Skill Ripjaws 8GB RAM
NVIDIA Geforce GTX 970
250GB SSD / 3GB SATA / Blu-Ray Drive
Corsair 750W PSU

Proposed New PC:
i9 9900k CPU
Asus Maximus XI Hero
Corsair H100x Hydro CPU Cooler
Corsair Vengeance 16GB DDR4 RAM 3200 MHz
NVIDIA Geforce GTX 2080 Ti
1TB Samsung 970 EVO M.2 (I will reuse my Blu-Ray and SATA drives)
Corsair 850W RMx PSU

I am unsure about the CPU and graphics card. I have the savings (at the moment) to more or less buy what I want, but I want to get the balance right between making a purchase that will last me several years (hopefully) and not wasting money.

Also, are the cooling and power supply I have chosen sufficient for this system? Thank you in advance for any advice or suggestions.
 
I dont think you really need an i9 for what you'll be using it for.

Depends on what audio programs using for encoding / editing - have many tracks/samples are being edited etc

6 core intel in theory should handle it fine with keeping down the price a little

Get a Ryzen, pocket the cash for a new monitor!

Intel normally wins for audio and Adobe programs due to core speed .
