Upscaling and restoration of old media?

I'm unsure how this works best now with AI rapidly being more relevant. I'm looking at trying to fix some shoddy YT videos and some old VHS stuff also.

Basically what's the go to with it now? Or what's reasonably the best way.

I came across this recently, which was reasonably easy to use:

I used it to upscale some early 2000s digital camera video from potato resolution, and interpolate the 10fps up to something resembling acceptable and the results were kind of incredible.
