I really want NCAA Football 08 on the 360 but it wasn't released to the UK - my wife is going to NYC in Feb - could I get her to buy it and would it play on my 360?

It would need to be region free. There are a few places where you can find out if it is.

Its an EA game and I am sure all if not the mass majority are region restricted. This one is locked to the US unfortunatly. edit sorry already answered above
