What do you think about unfrozen chicken breasts sealed from purchase refridgrated 1 day over use by, ok to use ?

What about potatoes how long do they last over use by?

I cooked the chicken and it was still a bit pink after over cooking and the texture was a bit weird. So I threw most of it away.

Oven on a wire rack and oven pan. I cook the same chicken usually every week from m&s in the same way. Not sure why it was pink like that after cooking for 30 mins.
