User Profile on a Fresh Install W10

Many moons ago I used to reinstall windows regularly just to refresh it and get rid of all the junk I'd installed etc. Getting older I can't be bothered to do this as much and my current W10 setup has been going for a couple of years now. However, I'm looking at upgrading to a Zen 5 setup so I'll be installing from fresh when I do it.

How do people backup and copy their profile over from the old PC to the new install? Do people even do this or just start from scratch? I used to just copy the profile to a usb drive and then copy it back to the new install but wondered if there was an easier/automatic way of doing this. I think W10 used to have a backup profile option but it's grayed out on my PC.
 
Most stuff (like pictures and downloads) can just be copied and pasted easy enough and you can save a theme for your desktop, but some of your data gets hidden away in the AppData folder.
