Using 25" TV via. HDMI ~Text Size~

Just built my first custom build pc, and all is working fine.

I am using ATi Radeon HD 6950 GPU, and using HDMI to connect to my 25" TV.

Recommended Res is 1920x1080, however this shows too small, and also leaves area of screen unused.

I adjusted DPI to 125% and this made text readable, however iTunes isnt fully compatable with the DPI change, text has gotten larger, but not been allocated enough space.

Is there a way i can: i- use the whole of my screen
ii- stop the problem with changing DPI

Look for a setting for overscan in the catalyst control center and adjust it to get the screen filled - normally 0.

ATI made the stupid decision to underscan by default on 16:9 resolutions.
 
What TV do you have, and what resolution does it natively display? I have an HD-Ready 32inch Philips attached to my HTPC, Windows recommends 1280x1024 and the TV can accept a 1080p signal. However, the resolution of the TV panel itself is actually 1366x768. If I set the PC to 1280x1024 the text is abit blurry, if I set it to 1920x1080 the text is horribly small and almost impossible to read, but when set to 1360x768 it's pretty much perfect.

As for the areas of the screen being unused, as ffallic said, check in CCC for Overscan settings, but do this after you've tried some other resolutions.
 
It's an underscan issue, somewhere in Catalyst. Happened to me too, for some reason it had 15% underscan and took me an hour to realise where the settings was in Catalyst.

In Catalyst, it should be under Desktop Properties, then Underscan. Slide the slider to 0% and that should sort the problem out.
