Using an old Android phone as an MP3 player?

Might be a bit of a weird one. I've got my Galaxy S3 sitting around gathering dust, is there any way to rom it in some way to function basically as an mp3 player? Try as I might I can't get over not liking using my daily driver phone as an mp3 player (I don't like running down the battery when it's not needed) plus it's a Lumia 925 so there's not exactly a boatload of storage space. I guess I could pick up a payg sim but just in terms of streamlining I'm quite interested in just basically turning off all the phone stuff on the S3.

(I know I could get a Sansa and be done with it but tbh I'd still like to get some use out of my S3)
 
I use a Galaxy Pocket Neo in my car as a dedicated music player, connected via an AUX cable. I've disabled a lot of the pre-installed/system apps that I don't need, and it's surprising how much battery life you can get from a phone without a SIM card installed.

The only annoyance is the lack of physical buttons so I have to unlock the screen in order to skip a track or whatnot.
 
The phone should just work without any SIM inside it, that's what my mum did with her old Ace 2 when she upgraded phones, so it's essentially a mini "tablet". The amount of battery life it gets when it doesn't get used as a phone is insane.

As for an actual ROM without any of the phone stuff, XDA might be the best place to ask how to achieve this.
