would using a y splitter cable to connect the line out's from 2 devices to the line in on my onboard realtek sound card cause any damage?

or even one of those spider 5 in to 1 things as there's actually more stuff I'd like to have permanently connected

never listening to more than 1 device at once, juse for ease/not having to change cables

I wouldn't imagine there would be any problem using a splitter to connect two devices to a line in. If that other thing is a 5 way splitter, then I don't know. If it's some kind of switch unit, then that will be fine.

It shouldn't damage anything, but connecting multiple outputs to one input can cause issues with level where your volume can decrease if you have multiple devices powered on and connected to each other.

In professional audio the general rule is that you can split an output into multiple inputs but never run multiple outputs into one input. In a home audio setting like this you can probably get away with it.

A better solution would be a little switchbox. You can find them online or build one yourself if you're handy with a soldering iron.
