VCR Video Capture to DVD

I have a project to capture all of our analog camcorder tapes into a digital format including some VHS tapes. Now I have a GeForce 7800 GT that has VIVO which means I can use it as a video input source by using the WDM driver so that isn't a problem.

Is there any free software around that will allow me to capture video into a format that can be easily edited and then transcoded to DVD format? I've had a look at the freeware utilities sticky but I don't know where to begin.
