Just for reference I ran a overclocked 2500k and later a 4670k with a AMD r9 290 with 3 HDD's and 5 fans on a Seasonic SII 500w for a few years thats about 10-12 years old now and it just wont die. It now powers my 6600k and 1070ti without any problems.
Your concerns with the power supply was the same as mine as I was tempted to get the Vega 56 as the price and games where great but I was lucky and found a very good price on the bay for a 1070ti and went with that.
If the price is good the PSU you're intrested in should be fine.
