Vege Meal for Office

Hi All,

Just need some ideas for a Vegetarian meal (also excluding fish) for the my office - only 6 of us, so it's not that bad. Just having a bi-weekly cook-off :).

I normally eat meat in most meals, so I want something that is pretty easy and tasty. Any ideas?

Good ideas guys - I like the homemade pizza idea - thing is I have to cook it at home and warm it up in a microwave!

I was also thinking a bulky vege curry - think that would be feasible?
 
Just a microwave unfortunately - would prefer to re-heat on a hob or some kind.

If I make a curry, what sort of veg do you think? I was thinking potatoes, cauliflower, green beans? Any other veggies?

Made a Thai Red Vegetable curry in the end.

Used Aubergine, Courgettes, Mange Tout, Baby New Potatoes and Cauliflower.
Made the paste from scratch with, Red Bird's eye chilies, ginger, lemongrass, galangal, lime leafs, lime juice, garlic, cumin and coriander. Didn't have a pestle and mortar, so I just mash it up with a fork in a bowl with some rock salt.

Bung it all into a saucepan with some fish sauce, soy and vegetable stock. Simmered for 20 mins and then added some coconut cream and milk. Tastes lovely! Serving it with lime wedges tomorrow. Should be good.
