I'm doing a vegetarian Wellington for Christmas dinner (well, for the 2 veggies coming - the rest of us are having rib roast). I've found a few recipes, but just wondering if anyone has any that they've used before or any tips.
I'm thinking I'll avoid the nut ones I've seen and I've seen a few with rice included but not really sure what is best. Obviously, I'll have to be careful about getting vegetarian pastry (I may make it, but probably will buy it). Planning on preparing it on Christmas Eve or the 23rd and cooking it on the 25th.
