I'm getting tempted, but I don't think the Indian is open on Christmas day.

My brother in-law is vegetarian - vegan turkey last year, which I had a bit of, and it was surprisingly decent. Not something I'd pick for myself though.
This year, me and the Mrs will be hosting, and the in-laws will be coming over. Among a couple meat options, we're going to do a homemade "no" beef wellington (vegan) for the brother in-law. I've never had this "no" beef wellington, but it's a recipe that the Mrs uses to make it, and her brother likes it apparently, so it must be decent.

The Fallow Youtube channel has a bunch of videos on vegetarian dishes but the one that springs to mind, not just for it's suitability to go with a Christmas roast but also the easy, stress free cooking process, is their confit cabbage. It's basically a case of cutting sweetheart cabbage into quarters, frying it in a pan until you get some colour on the cut sides. Then you take it off the heat, add some butter and water to coat the cabbage quarters, cover the pan, and put it in a low oven for an hour to ninety minutes.
