Gone with two HDDs, one for seek and one for write, read it's supposed to help render times, if not RAID0 will make them faster and give you more space

Where's the graphics card?

I highly recommend overclocking the i7 2600k. You can buy a good CPU cooler like the Cooler Master Hyper 212 Plus CPU Cooler for £20 and I'm fairly sure you can overclock to at least 4.5 Ghz which will give you a good speed boost when encoding video's. Oh and I don't think you would need a SSD for your needs needs, you might aswell stick with one fast HDD and if you need a OS then use the money to buy Windows 7 instead.
