Video Format & Quality (iPad)

Given the recent rumour of the iPad 3 release on 7th March, I'm going to add another Apple product to my collection, so far only a 64GB iPhone 4S.

I only however add music to my iPhone, never video. I'd like to begin readying a collection of video files for my soon to be iPad.

Questions;

1. What format do they need to be in?
2. To ensure best possible quality, what resolution do I transcode to?
3. What software will allow me to do this?

Use Handbrake which has builtin presets for iPhone/iPad output formats.

The new iPad could support resolutions upwards of 1080p, might be best to wait a while to save re-encoding all your files again.
