Going to try my hand at overclocking my BFG 8800 GTX today but thought id seek advice first as its a pricey piece of kit :D
Do I OC the core first, then work on the memory?
Also is there any software I should use?

I know the Ntune stuff is supposed to be rubbish so wont use that

DOnt use Ntune.
i used ATItool, its a free download, and i prefer it because u can do artifact scans to test for stability properly. i think its core first, then memory after. and dont go up by too many increments at a time. i went up by 5mhz until i got an artifact after 5 minutes of scanning. then once id got an artifact then id drop it by 1mhz or so. it is quite a lengthy process but well worth it. i managed to get a GTX standard 3dmark06 scores out of my GTS.

ive had to return the clocks to default now tho, as ive beeen having problems that potentially COULD be the graphics card, so just being safe lol.
