Virtual machines

This may not be possible, but heres hoping.

Could I stick linux on a VM and have the VM output to another monitor, with a seperate keyboard and mouse too? Now that I finally have a CPU with VT-x I don't see the point in dual booting.

2 KVMs would, in my mind just be easier. That said the only game I play really is Eve Online, and people have had success with that under Wine anyway.
