Virtual Network on VMware

Hey guys I recently got a free copy of Windows Server 2008R2 x64 through my college and I would like to start setting up some small networks with in VMware for learning purposes. I preferably want all the VMware operating systems to leave my current network alone and have their own virtual network instead.

Is there anyway to do this in VMware workstation?

Not sure about workstation but server certainly can be set to host only.
